that being said you can just boil some milk in a pot (anything but homogenized), turn the heat off, and add a splash of lemon juice or vinegar and stir. the milk will curdle after a few mins. then strain it through a fine mesh or a cheesecloth and you have fresh cheese. add in some salt and seeznins and you have it made. stir in some butter (a processed milk product itself) and you have a kind of cream cheese. you can make it firm by wrapping in cheesecloth, forming it, and then tying the cloth to a wooden spoon over a bowl to catch the escaping liquid while it hangs out in the fridge.
