Why is this C grade Japanese RPG so highly regarded? It appears to be massively influential over modern western culture

Because of nostalgia. This along with Nintendo in general, Sonic, Dragonball Z etc were some of the first mainstream cultural exports from Japan to the west. There are young grandparents out there right now that would have played Pokemon or watched the anime as a kid. It's just sad how much people cling to nostalgia as adults rather than living life in the moment.

Pokemon has been terrible for biology teachers because it defines "evolution" as something that happens to individuals within a generation.

It's simple enough for kids, but deep enough for reddit tier faggots to feel good about themselves for being "good" at a turn based game that mostly boils down to knowing meme strategies.
Honesty the biggest skill gap these days is remembering to have your cheated pokemon be legal and not include "buycheatedpokemon.com" or whatever as the ot name.
