Currently learning Japanese and not really into anime, but I think if I were to watch it when my Japanese is good enough, I'd start with the 80s and 90s ones. Those look way better than the trash they relentlessly pump out these days.

Cowboy Bebop was only good because of the OST and Trigun was just bad in every way. Outlaw Star, now there's a real millennial anime.
