>>21081661you need to do a couple things to get that extreme Bite.
1. carb at >40 psi for 5 days for a 5 gallon keg, or over 24 hours for a 1.6g mini keg
2. do this under refrigeration
3. mineralize the water. part of the extreme bite will come from the mineral content, and extremely carbonated water, due to its carbonic acid content, and take on larger amounts of dissolved solids.
this can all be done in an extra fridge as shown in my picture above. the mineral bill can be computed with a spreadsheet that is publicly available. I can share my recipe . all the ingredients are available in food safe forms for things like pickling, wine making, ect.
