>>21417717You take 20 phyllo (pastry leaves). You brush the bottom of the pan with melted butter and a little bit of olive oil. You stack 10 phyllo leaves and you brush every one of them with melted butter (stack one - brush with butter, stack the other one and brush again) untill you get to 10.
The filling: 2 eggs, 150/200 grams of full fat yougurt (sugar free) and however much white cheese you like (cow's milk cheese like Feta). If the cheese is too salty you can put in water for 1 or 2 hours. Mix everything together until homogenous.
After you put the filling on top of the first 10 leaves and spread it evenly, you start stacking the remaining 10 ten phyllo while brushing melted butter in between them like you did the first 10.
After you've stacked everything. You beat one egg and mix it with two three table spoons of yougurt and 150/200ml of carbonated water. You cut the dough into even squares and than pour the mixture over the whole thing evenly. Put in a preheated oven at 200C/400F and bake until crispy (40-45 min) First 20 minutes at the bottom rack and the last 20 mins in the middle.
