I know Mexican ones do all sorts of nasty stuff, like using the same knife to cut onions as they do to cut raw pork, and I've heard people say that they've found stuff like fur, fangs, and blood in tacos they've gotten from street food vendors.
What I do feel more nervous about are Indian DIY/manufacturing-related videos due to the lack of personal protection equipment. I've noticed that many of those videos have people touching stuff like live wires without disconnecting or turning off power supplies, using angle grinders and circular saws without taking minimal precaution measures, working in machine shops while wearing loose clothing, amongst other such details. As far as I can tell, much of what they make "works", but I hope for their own sake that they will eventually start caring about workplace safety.
As far as development is concerned, I would say Mexico is just a nudge above India, and I believe that part of the reason for that lies in American cultural influence and close commercial relations between America and Mexico. Nevertheless, I do believe both countries can greatly improve when it comes to a lot of things, such as education quality, safety, personal accountability, fighting against crime and political corruption, and overall bringing up living standards for everyone.
