but the process to get them ready was too basically put a shit ton of like cooking oil i guess in the pan to grease it, the flop the thick dough down into it, then dump more oil on it, and let it sit until it can be used later
many years later i maintained commercial dishwashers. i have one of the last "dine in" pizza huts on my route with that company's dishwasher
these commerical stainless steel dishwashers use a cleaning detergent that's so intense if you let a drop of it rest on your arm for 10+ seconds it burns the fuck out of you and leaves a lesion
but the manager would complain to me about those same pans they'd dump all the oil in to make the deep dish dough and pizza, because that shit couldn't even clean those things very well without a ton of scraping/blasting it with the high pressure pre-rinse hose lel
