Not true, they always pick one at the end and Love Hina is no exception. Actual harem endings are really rare, generally confined to porno visual novels.

To love ru protag is a genuine monogamist who just wants a simple high school romance with his female childhood friend and genuinely resents the insane situation he has found himself involved in. He despises the idea of becoming a harem protagonist, seeing it as demeaning to the women involved, to himself, and to love in general. There was also that anime That used to make a seethe hard. The ending was so shit MC picked a girl not best girl never is but he picked her got her pregnant and then another girl(authors favorite) got hit by a car and hospitalized so MC realize he loves her and leaves the other girl to be a single mom.
