Here in South Dakota, we have an Honest Harold. It's a casserole that uses a sauce that's similar to chili, elbow macaroni, and topped with cheese. Traditionally, the sauce contains goat's blood, but in the modern day people usually just go for some ground lamb instead.
It's named after Harold Wickens. He voluntarily came clean about killing a neighbor's goat so he could drink the blood in 1893. He bought the neighbor two new goats even though he only killed one. He also served the whole family his favorite casserole to make amends. On Super Bowl Sunday, thousands of South Dakotans will be having an Honest Harold.
