Brown Onions in butter. Slightly brown some thinly sliced fatty ham as well. Maybe some mushrooms. Remove ham and mushrooms. Add more butter and make a roux.
Stir in red whine, grape juice and stock.
Add cubed carrots, parsnips, celery root and other root goodies. Add the thinly sliced ham, Orions and some bay leaves, thyme and/or other herbs. Let simmer for at least an hour. Maybe more. The root veggies should get so soft they aare mush. Make

Serve with potatoes.
