Jaw muscles are another, kind of a hidden gem in butchers cuts and tailings, because the jaw is actually by FAR your body's most powerful muscle in terms of strength-per-size. It ends up with a very strong one-directional grain but also very very tender. Again, something not worth butchering or packaging or buying alone, but you get one basically for free here. If you can eat a thanksgiving turkey with all the giblets and organs and shit, meat all attacked and mixed in with tendon and gristle, this shouldn't bother you at all
