I would guess the minimum requirement for survival are:
>upper spine>at least a third of a liver remaining>at least one kidney>basic stuff like diaphragm, stomach, lungs heart of course>20% of the digestive track remaining (that’s a guess)>(if you lost too much intestine you could still survive by eating through blood transfusions, very expensive and on severe life support forever)But that’s all you need
As far as humans go, your mind, consciousness etc are just your brain
If you were a brain in a jar, well oxygenated and well fed with ATP and sugar, and not in a coma, you would be fully conscious, just total sensory deprivation
If you were a cut off head, you can survive, now the neck contains a part of the brain stem and the brain doesn’t like that area being cut, the nape being damaged seems to short circuit the brain and lead to coma or death
But if you avoid that, let’s say cut off a head and spine predator style, you could still taste, hear, see, smell, think and feel things with your lips just fine
And if the EXTREME job of attaching your neurons to wires is done (you need to figure out one by one what every single nerve wire does), then you could control a robot or drone like you control your limbs, humans could totally live as robobrains from fallout, and it wouldn’t even be that inconvenient
Humans when injured either die from low blood pressure or infection, it’s really hard to kill a human, you have to destroy the brain to destroy consciousness, and this can be done only by direct damage to the brain or cutting off blood flow
Otherwise you stay alive and potentially conscious
If your blood pressure falls too low you pass out, this is your brain going to sleep mode to save on oxygen, and if it doesn’t get better you get apoxia.
