Cliffs of Dover are littered with many forms of cabbage and carrot. My best bet would be stews of hunted meat with potatoes and onions. A nice grainy loaf of bread and beer or wine. An Irishmans diet from the 1800s is probably pretty reflective

That said until the population boom just before the black death people ate meat commonly. mostly pork and beef. Chicken was considered a more expensive dish, something like a fancy sunday dinner today.

Sheep, skyr, nuts, oats berries, rutabagas, fish. Naming a few.
I can't eat Skyr because of my mild lactose intolerance, I eat Greek yogurt instead which doesn't have an effect on me for some reason.
If you're going to change your diet I'd advice first giving up soda, candy, chips and ice cream while eating moderately healthy foods. I at least couldn't completely change my diet overnight.

Not sure, a guess would be that people in Northern Europe had to find ways to keep themselves warm. Sheep wool therefore became important and people ended up with a lot of sheep to eat, they also survive during winters because they are covered in wool, as long as they're in a small shelter. They taste delicious too. Nothing beats hangikjöt, smoked lamb.

Yeah, to some extent you can do this with chickens and dogs too. Cows were the main hassle but the sheer quantity of milk/meat/farmwork helps even it out. The vast land of the new world is why they took over there instead of pigs.

People at least in europe didn't feed them literal shit often either. It ruins the taste.

Yeah it sucks, literally no one in my family has it but me. My mother has a very weak digestion system though, probably just inherited something from her. I haven't actually been tested since I don't care too much but ever since I turned ~18 I couldn't drink milk without hurting my stomach and constantly releasing wind.

Anyone going without lactose for a two month period wont ever be able to get back to it without being intollerant.

My family owned goats in Germany for countless years. They said before hand they hunted regularly.
Cabbage, other vegetables have been there since before time was recorded.

I think the problem with pasteurization is the process in which it is done. Look up Vat pasteurization. Instead of heating up milk to a ridiculous temperature, it practically cooks it for hours at 145 degrees Fahrenheit. I go to a local farm that's in the north Georgia mountains and that is the process they use, along with non-homogenization and the milk is worth $5/gallon. It's truly fantastic. I also really like supporting the white, Christian family who owns it
