it will likely cook faster on a smoker
i tend to use a dehydrator for jerk bc it's good at holding very low temperatures without fluctuating randomly several degrees

possibly it mostly depends on your smoker. electric ones hold stable temperatures fairly well but if it autofeeds wood pellets instead of using chips in a pan above the heater, sometimes the pellets can flare up and make the temperature spike

hope it doesn't affect the quality that i'm using more affordable london broil, but 6 hours of slowcook/dehydrate should mitigate any connective tissue.
hopefully jerky will becaome more accessible than $8 for a measly 1.5 oz.

i've had homemade jerky from those little countertop electric dehydrators, but i bet it comes out better this way...

low and slow 125° for 6 hours.
it's done when it's dry enough to crack and expose fibers, but not dry enough to snap in two.
