coating it in cornflour and seasonings then frying it in toasted sesame oil is nice
recently i tried thinly slicing it with a mandoline and marinading it overnight in onions sauce and mirin and gaerlic and stuff and that turned out quite well
soft tofu is good in miso soup and mapo tofu and stuff like that

oh this sounds goodlier, and the thin slicing sounds like it would soak up flavors nicelier too
is it always super soft or is there a way to make it a bit more firm?

you're supposed to press it before cooking to remove excess water but i've seen some brands of tofu that say it's not necessarily
instead of pressing apparently you can put it in boiling water to remove excess moisture because it causes the proteins to contract or something like that idk i haven't tried it
slicing it thinly and coating it in flour before frying makes it firm and crispy
and there are different types of tofu so look for one that says firm
