What if we add a component to chess where the board is flipped at random points through the game so you must play your opponents pieces? Would make chess more interesting to watch

shaking up & randomizing the game, adding entropy/luck, it would bolster shitty players & hinder good players, which would make it uninteresting indeed...

then, it seems like modern chess is mostly memorization & bug shit at this point

They call it fairy chess. Basically a catch all term for chess with specialized rules. There are many variants. Horde chess is interesting. Bobby Fischer was a big fan.

It was popular in the mid 20th century, very popular

Nice digits. That's what Bobby Fischer basically thought in his time. That it was a solved game. In some ways it might be but there is still strategy involved in timing and the like.

For the anti chess thing I'm not too familiar with all of the different variants but that does kind of ring a bell. It sounds very interesting conceptually to say the least.

I know you know this but others might not: that's why he invented Fischer Random chess. Same rules as chess except the positions of the back rank pieces are randomized so you can't memorize opening theory.
