method
get a few stems of tenderstem and chop into 1cm slices, put to one side. trim tougher green part off leek along with root end, split lengthways, slice into 5mm sections.
bring a pot of water to a boil, salt it but not too much, about the same salinity or a bit less than a stock/soup is ideal.
heat a brushe stainless pan on medium flame (enamel or something would also work just no nonstick or anything that has a layer of seasoning built up), add some evoo and the tenderstem stir around for a minute or so. put ur spaget in the water. now throw the garlic into pan and wait for it to start to sizzle. leek into pan, season and sautee for a bit then deglazed with ww vin, now reduce the heat a touch and put 1 chef spoon of pasta water into the leeks and stir, keep it moving and every time you see some fond building on the pan add another chef of pasta water, continue untill pasta is ready and leeks are sweet. pour about 300ml of pasta water into the pan and drain spaget.
now put spaget in pan and agitate, knob of butter into pan, aginate, handful of cheese agitate, cheese agitate repeat untill an emulsion is formed.
you want to keep it in pretty much constant motion or itll split, remove from heat when most of liquid is gone and add final cheese.
serve by drizzling with some extra evoo
