i've had "real" gouda, cheddar, gruyere, brie etc. it's either too dry and crumbly (like it has sand in it) or its overly soft and lacks flavor. kraft has cheese-food down to a science. "cheese making" in the traditional sense is overrated and marketed to people with more money than taste.
