God explicitly told Adam and Eve to not eat the fruits of the tree of knowledge (of evil). Since we are nowhere near at the level God is, we can easily fall into temptation if conditions are right.
I'm not trying to handwave your arguments, you do bring up some good points. Please try to understand that God is a being like you and I and also has his own free will and can act as such.
