>>3253393to be perfectly honest, i don't think the soak time really matters all that much. longest i've ever let my potatoes soak is about half an hour, and i never felt a noticable difference. the only possible reason to soak i can think of is that if you sprinkle the seasonings and then immediately throw them in the cooking oil, they might shed the seasoning after contact with the oil, but i have no proof of that.
my absolute favorite potato recipe requires only about 5-8 minutes of cook time, but a bit of prep before
>peel and cut into wedges>put into boiling water for two minutes to tenderize and make more receptive to seasonings>drain water and dry with paper towel>add seasonings>soak time>put some cooking oil (in bulgaria we use sunflower oil) in a small pot (in europe we say 3-4 fingers depth, meaning about as deep as the palm of your hand or as three fingers stretched out horizontally) on the fire to heat up>when oil is heated up, end soak time>then add potaters. they'll be done in about 5-8 minutes. crunchy on the outside, creamy on the inside>>3253437goodnight best idol poster
