Essentially, a good gauge is what they're wearing, and whether or not they'll shake a woman's hand. A modernist might shake a woman's hand, a Haredi won't.
Modernists have some divisions, but they're much more similar than different and thus don't warrant going into depth.
Haredi have divisions based on location, legal theories, Jewish mysticism, goal sets, etc.

You could ask them about Judaism. You could mention that you are interested in learning. You could fake being Jewish or claim to be a secular Jew, etc.
