Lots of potato, beans. Meat, mostly pork and chicken (sometimes fish). Some other veggies as well but less so. Lots of fast-food joints, especially in larger towns. Rice and pasta too but those are either really basic or just borrowed from other countries.
I use various culinary blogs to help with cooking were you will find some will to experiment - even there seafood is rare (as it's expensive and hard to find) and overall not much cooking with cheese or eggs in it.
We really aren't mediterranean. And the famous sarmale are borrowed from Turkey.
