I fucken love hotdogs.
The magic is all about the chopped, white onion.
I pickle about 3 onions at once, a few weeks worth.
Ingredients:
Shichi-mi tōgarashi spice mix (pinch)
Salt (half teaspoon)
Fine white pepper (pinch)
Black onion seeds (pinch)
Sugar (2 teaspoons)
Zeal / msg (small pinch)
Vinegar mix...
20% water
40% malt vinegar
10% mirin
10% rice vinegar
20% japanese sushi rice seasoning
Add water first, then add spice mix to ensure mixed, then mix in rest. Shake to stir a few times over the next 2 or so days to infuse. After about 3 days total, perfect onions.
