Middle ages? Thats 400 years after the volkswanderung the germanic tribe migration after the fall of roman empire. So at this time about 20% of southern europeans looked very northern european or had some traits from the north.

But i would say most historians say that southern europeans before germanic tribe invasions, including iberians just had brown eyes and darker hair, some celtic tribes already had blue eyes though so its possible that there were many blue eyes southern europeans with blue eyes without germanic influences

Very likely a mixture... there were linguistic Celtic groups from the Iberian peninsula and West Rhine area of Germany, then later the Angles, Saxons, Jutes, Frisians, Danes, Normans, etc. You can trace all of those groups back to the same point in lineage if you go back far enough.
