Your not meant to consider Adam and Eve story as to how first two humacs came into existence, but why are we here without direct contact with God. It's because we want to make our own decisions without being influenced by others. God doesn't forbid you from touching a hot piece of metal, instead he tells you to stay away from it or you will be burned. All the things we are doing that we can consider as sins ultimately are damaging to us, think about it. Stealing, killing doing drugs, fucking like wild animals with each other, destorying the family values. You can see for yourself how it worked out for western civilization .
You also need to take in account that Bible is pretty old and a lot of people had access to it and it isnt wrong to assume some greedy and unbeliving bastards would change some parts of it when catholic faith and it's structure werent yet fully developed. It wouldn't surprise me if some of them did remove some parts for the "greater good" of faith or to help believers escape persecution.
And if you want to know what I believe god may be, and you want some more understandable explaintation try searching for "tulpa" on google and read what they are, then ask yourselves is it possible that we are gods tulpas, if you consider god as a superior being with a vastly superior intellect then it wouldnt be so far fetched. Sure that's just how I imagine it to myself but whatever, everyone needs some kind of help to imagine something he never saw, like can you try and imagine yourself a new color? that no one ever seen before? technically yes you can, but how about doing it in practice?
