Falafel.
Leave some chickpeas soaking overnight. Drain them the next day. Grind them up along with an onion, garlic, parlsey, and lemon juice. Mix them with cumin, salt, and Cayenne pepper. Shape them into small balls. Fry them, and serve them in a pita bread along with some cucumber, tomato, and red onion, as well as either tzatziki sauce or hummus.
