I don't think hacking at a bear with a sword would do it much meaningful harm either. They have thick fur, and thick skin. Only stabbing would be likely to do anything meaningful. Half-swording something large and giving it a good jab might be useful. The plate armor is nice in that the bear can't snag your flesh, but a good swat could probably still debilitate you. I would be surprised if a bear couldn't hit you hard enough in the head through a plate helmet to kill you.
Whether or not it could eat you afterwards is another question.

A situation like that doesn't often go as you want, and it could go ugly very fast. I just think that all things being equal, life or death, the odds are in my favour. Severe injury is expected in all but the best scenario.
