I made these at my in-laws house and really showed them up like a G.
First thing you need is some tortillas, bite a little hole in the center. Throw a bit of salt in the pan if you like, I usually do.
Now turn it about medium heat, not too high.
Wait until you get one side pretty crispy, you want it to be a little stiff (when you pick it up, it should not be floppy).
Ok so you have one side crispy, the other side still soft.
Flip it over and crack an egg over it.
Try to get the yolk in the center, (that's why you have a hole).
Do your best to keep the whites inside the boundaries of your tortilla. This is not always easy.
Did I mention you should have already had your toppings cut? Well, you should.
I use onions, peppers and cheese minimum, but I'd add some bacon too (the bacon should be cooked first, even in the same pan you are using for your egg taco now).
Ok, so after adding your toppings, flip that bitch on it's head for the last time.
Now WAIT at least 3 minutes to let the cheese get nice and crispy on the outside. If you're using a non-stick pan, you should be able to slide it around in the pan without a utensil when it is done.
Now drop it in your plate, add some salsa and maybe fresh lettuce, and enjoy!
