Thing is even if you don't have binary packages for your stuff if you use an OS that has a ports-like build system it shouldn't be an issue (like Gentoo, Arch, etc.)
The main benefit for me is ease of configuration. Something like GuixSD is extremely configurable in a way that Debian just can't be. If I were you I'd stick with something that you're comfortable with. If you have a test server VM (unlike me cause I'm dumb) you can try out different OSes and see which is the easiest for you to work with.
