I'm torn. I love making food and I love making money more and I don't want this pipe dream I have to be a pipe dream.

Your family/gf just have a healthy amount of skepticism. Start with a smaller project first instead of a full-scale restaurant - something that requires less monetary investment. That should be a good proof-of-concept to the skeptics while also not breaking the bank if it does fail. Maybe a food truck?

Take it one step at a time. Work at restaurants as a cook first, for a good few years, get credentials, then go and find a bank who will give you a good loan to open a restaurant.

But before you open it, think about these:
1. What will your restaurant serve?
2. Have you made the design of the restaurant appealing and allowing of fluid movement?
3. Do you have a good design for your menu? (Many failing restaurants don't have a decent looking menu)
4. Do you have proper food storage?
5. Do you have a system for all your employees to follow that makes sure you don't go under? (Who mops the floor, who does the dishes, who is a waiter... Floors get cleaned every day after shift, kitchen gets wiped down every day, windows get wiped every week...)
6. Do you have a system of keeping records of you sales, purchases, and transactions? All business have to keep a very accurate and up to date record of finances.
7. Do you have a good system of ordering ingredients?

This is just the tip of the iceberg, anon. If you really do want to open a restaurant, then go ahead. Follow your passion. If you're good at it, then the only reason you'd go under is if your restaurant was just shitty.

I'm not sure yet. I live in the Midwest so I might see if I can get family recipes and improve on them
