There was this Australian businessman that wanted to make another Titanic but it got delayed many times and there hasn't been any news of it anymore. In China they're making a Titanic replica for a theme park or something. the ship will never sail it will be stationary in a reservoir.

Yes, rifled bores will work as usual. Sufficiently gyrostabilized projectiles will hit the target tip first.
Fin stabilization doesn't work in vacuum ofc (mortars etc), however direct fire smoothbore guns and launchers will work also when there's no need for particular impact projection for a projectile. Shotguns are still quite useful.
