i do a fair bit of organic vegetable gardening and from my experience growing food in rich composty soils there is a noticeable difference in the flavour. when i'm growing silverbeet or chard it has this almost metallic taste, not at all unpleasant, but it can be a shock at first that so much flavour can be achieved. i believe this is the nutrient density.
the soil is the main component. chemicals harm the microbiology of the soil. the symbiotic organisms that convert the minerals into a form that the plants can use.
life has a way of limping along, just to get to the next generation. you could grow chard in a bucket of nearly pure sand. it would still produce leaves.
who do you think would taste better?
