Is there any cheese that you can actually pair with barbecue? I think that the occasional foray into cheese sauces is fine for a restaurant or something, but are there any kinds of cheeses that pair well with the smoke and spice of bbq? I know that cheeses can be varied enough for it to work, but I don't know if it's actually a good idea.

Also primarily aimed at other Dixians people who think throwing meat on a grill is barbecue need not apply
