Otherwise no issues with me. Temper it to RT and process it. The most flashy thing to have that would be either to smoke it at first (anyway pre-cook it) and then skewer it on a (gas) fire to crisp the skin and melt the fat. Chop it while it's turning.
Anyway, preparing that for food as whole would be a two or three day project.
