What is your favorite foreign cuisine and what you think is the most underrated foreign cuisine?

My favorite is Indian food, I really love the flavors commonly found in curries: cumin, cilantro and the like.
I think the most underrated is Polish food, the flaczki from this one Polish church Christmas festival in my area is hands down the best soup I've ever had.
