For one, most of the diets that get shilled along with ACV are ancestral diets like paleo or keto that are high in fruits or vegetables, which makes them alkaline diets; meaning they lower your stomach acid's ph. Thus adding some acidity back via vinegar apparently seems like a good idea to some people.
With diets like intermittent fasting, you also get another benefit: vinegar slows down your digestion, allowing you to go longer without any feelings of hunger, which naturally makes the fasting periods easier.
On top of that, it lowers blood sugar levels, so it's not a bad "counter" to your typical western, high-sugar diet in moderation, but drinking it daily, like some YT channels like to suggest, would be stupid still. You'd pay for any notable benefits by fucking your teeth up with it's acidity.
Lastly, the bad smell isn't common with better brands. Most of the good products smell quite significantly different than your average supermarket brand; that vile acidic stink is only common among the cheap stuff.
