I will make pre-smoked grilled deer sirloin (game, I have it prepared on my counter already) with natural herbs, mushrooms and berries only found in nature up here. I will use some salt as well. And water. Should be a blast :DDD
The second one is complex. I have received a "recipe" (an oral description from a senior citizen) which describes a large fatty fish fillet marinated in "strong tea" (tannoids of the tea makes sense in marinade), strong peppers, fruit and salt. No further mention of the species of the fish.
This recipe allegedly is coming from Suomen Joutsen, which was (and still is) a tall ship sailing around Kap Horn. Today it's a museum ship you can visit. I have visited it.
The recipe implies the fish was somehow baked or grilled after marinating it in large quantities. There's no clear description on how it was done on board. Makes me think this was a dish made in harbor or similar. Suomen Joutsen was a pretty adventurous ship anyway.
I have a two kilo salmon fillet prepared, dark Chinese tea, air dried peppers coming from South East Asia and fresh mango and peach. Wondering if I should add something more acidic like fresh pineapple.
