The Cohen and Siegel families were Vegas elites running Jewish and Italian organized crime families.
Back in the day Vegas was free game for anyone and the five families were pretty much operating out in the open. This would change heavily until the 80's when they were all but displaced.
Now this isn't to say they went away. When I was a wee lad my father use to take me with him to work once a year for bring your child to work day. I was about 10 when we were changing the lights on the casino floor and I watched a bunch of guys in long coats escorting another guy and I asked who they were. My dad told me those were the people who really ran the Riviera. I'd later meet the greasy Italian meatball who was very good friends with my dad. Little did I know when I was 14 I'd do work on this man's house to replace the drywall in his study where he had a small accident involving a revolver and the back of his skull.
The Siegel family still has a foothold it's just less obvious but if you notice how pervasive the Siegel suites out here are you'll get an idea.
The families are still around and still running some of the older casinos just more behind the scenes. Instead of making a fake company to dump money into their casinos they make a legitimate company, invite other "legitimate investors" to pitch in and have their company run the casino.
I can tell you this though. If you know the right person and were raised during the right time you can still dabble with these people for small amounts of work ranging from building maintenance all the way to cash exchange.
They had to evolve with the times and with Wynn looking to sterilize Vegas they can keep behind the scenes.
