yeah, i don't get it either. i play humans more often than not when they're an option, every once in a while i'll play human-adjacents like human with long ears or short human, but almost never do i feel any desire to play stuff like orcs or dragonborn or something.
the main problem is the further away from human something gets the harder it is to have it be believable that it's a different race without being one dimensional. everything has physiology and culture that can basically be described as "humans but X" otherwise it would be really difficult to establish all their lore and get things to interact sensibly without a bunch of ton of prerequisite world building. then at that point if everything is basically human anyway so i might as well just stuck with actual human
