Most casual preppers have food and drink for a month or so.
If the virus kicks off in your town you will be under quarantine for 30 days, and that 30 days will RESET every time someone new gets infected. Well, if it's handled properly that's how it will work. The CDC is woefully behind the curve and doesn't even have testing kits at this point. There are states that have seen CONFIRMED cases like Hawaii, where a Japanese tourist tested positive after he already got back home, that have done ZERO testing. As in, we know the virus is there, but they're still not testing.
So there's a chance that your town might get locked down with NO expiration date because we can't test everyone and we'll never know when its safe. In which case the 30 day quarantine could turn into an infinite quarantine.
If you think you can simply buy 50 lbs of rice, 50 lbs of beans, 50 lbs of peanut butter and call it a day, you might be sorely mistaken. You might be under house arrest for month, after month, after month.
And don't forget. You can get the virus AGAIN. So there really isn't a "safe period". You can't shelter in place forever. And even if you get it and survive you can get it again and die.
I have a month or two of food, vitamins, drink, etc. But if this really cooks off even doomsday preppers with underground bunkers and a year of food will get hit. Because SOMEDAY you're going to have to leave the bunker after the food runs out, and the virus MIGHT STILL BE THERE.
I would say prep for a 30 day stint, but that might be more about just making yourself feel better than anything.
