it's a bit ESL either way to be honest. lack of taste implies that an object doesn't have any taste, but saying "of" twice so close is horribly awkward
i'd say the best wording would be something like "COVID-19 symptoms include losing sense of taste" but that isn't exactly great either
it's a weird enough sentence that i'd say native speakers would typically identify it as odd but most probably wouldn't be able to find a better margin
