A default bend like that allows you to position the knee bone closer to the kneepit while preserving the natural location of the hip joint, which gives an advantage over straight legs for simulating leg bending. Although it can also result in a strange "crouching" gait, depending on the motion (usually because the center bone moves too slow or goes too low, not a hard fix). Anyway, you can disable leg IKs and then rotate the bones or use leg D bones if your model has them. You will have to realign the positions of leg bones and IKs thereafter, and D bones to leg bones if you go with the second option.
