These are useful in hiding the bits that don't quite look right on the other pieces you're trying to use. I especially like #3 and #4 and tend to use tons of these.
As far as favorites, I quite like the #31 spiky ponytail thing which makes a decent forelock. I use the thin wispy bits in the mid-50s a lot too.
Mostly it's just trial and error though on what bit fits. If you run out of bits, don't be afraid to stack a copy-pasted identical character behind to get ten more bits. Also remember you can always enter bogus values for the bit size sliders with the import/export feature, if you want a particular piece to be enormous or tiny or very thin or something.
