I've been mussing with it for a few hours now and the "sweet spot" on sizes tends to fall between having your width at 250px (still) and having your height somewhere between 600-320px (ideally at 450 or so). Taller mascots tend to look better as they match the field they are displayed in closer, wide mascots basically only take up the lower half of the field and thus do not fill correctly.
Be careful about height however, if the mascot is to slim it will "burst" out of the top of the field and you'll just be staring at legs. Images such as
>>1492091 gave me this kind of fit so I simply adjusted the width of the full canvas until I had an approximate 2x4 sized mascot.
It's guess work still, but that's what I have found out so far.
