We always had contrarian people who refused to wear the gloves under the excuse that they could work and finish faster without them, and more than often, our boss had to rush them to the hospital after the geniuses literally sliced off an entire chunk of flesh from their hands.
Mandolines can be downright terrible if you don't know how to operate them so I can understand your fear.
(And the other number 1 cause of accidents in that same job? Oven burns, because yeah, some people also refused to wear the oven mitts. When a workplace provides you with personal protective gear, there's a reason for it so you better wear them.)
