Christmas falls on the 25th of December, so you can have Christmas Cake any time from the 1st to the 25th, after that it's thrown away because it's no longer Christmas and eating it after is strange - for some reason.
In Japan some men (typically traditionalist businessmen) think that when a woman reaches 26, she is no longer seen as the chipper, nubile/virginial wife because she is "out of date", it just so happens to have a nice metaphorical christmas analogy.
Thus the term Cake came along to describe these women - which, not being a white knight or anything, seems unfair because Japan already has a pretty demanding culture. The two women that I've been with that could be considered cakes were great.
