You couldn't really resolve any problems (curses, rivals, fiancees) because the entirety of the story revolved around those same problems. Sure, you could throw in an "-of the week", or some minor character that showed up a couple times and altered the overall dynamic (Akari, Konatsu) but otherwise status quo was the rule.
Ryoga couldn't become anything other than a rival, as that would remove his potential as one of the problems that Ranma would always have to face. Same with the fiancees actually giving up, or with Ranma and Akane actually acting like they actually did care for each other enough to get married, even when the series was ending and it didn't need to be drawn out anymore.
Whether or not the inability/unwillingness to end the series in a definite manner beyond "And the adventure/chaos continues!" constitutes bad writing is a somewhat different concern, tho...
