Dude 1x is great on MTBs. That looks like a 34T chain ring, so it's not a 0.5 MPH granny gear climber, its good for at least 22 mph on flats, which would be a struggle lugging all that weight around.
Touring, you really slow down your pace, not going balls to the wall like you're training. You keep cadence and pace at a much more casual level, 1x makes sense.
What doesn't make sense TO ME is Single speed setups on high end carbon bikes.
But I also realize their are places that are as flat as Kansas, and that makes 1x make even more sense. If you're only dealing with 300' climbs across 10+ miles, then maybe gears ~3-7 are all you use, and 8+ are for the extreme climb that's once a blue moon, and 1-2 for sprinting all out down a long descent.
