they perform much stronger than narrow cantilevers and much smoother than v brakes
the feel is close to SLR road calipers
low profile cantilevers from the mid 90s were supplied with three finger levers
and even when set up perfectly are not very impressive
so I think they have done a lot of damage to the reputation of canter lever brakes
that and they come with smooth post brake pads that are tricky to adjust
when it comes to putting v brakes on a bike frame made for canterlevers
there may be very slight diffrences in the hight and width of how the brake bosses are placed
that and the brake bosses when under the stress of v brakes can flex alot
you may want to get a brake booster a mid 90s product that connects the brake bosses to each other
also v brake pads are very thin and fragile
cartridge pads are a good upgrade as it allows the pad to be bolted in place more securely and adjusted more often
of course just so long as you can get cheep refills
