I just completed a 150 mile mtb trail on my road on 28 gatorskins. Singletrack, chert, flint, tennis ball sized rocks at times. Sure I had to slow on technical parts and dismount on drops but and my bike took a hell of a beating but I am absolutely fine with no punctures, kept a great pace, low pressure+ gel gloves and skinny carbon seatpost took out LOTS of vibration, and the 70 miles of road after that was a dream instead of the slog it would have been on a knobbly grabble or mtb.
The point being, I firmly believe that there's a very narrow crossover of tracks that would warrant an mtb and tracks that can be done on an "all"road / cyclocross with ≤32mm slicks, so gravel bikes are pretty niche machines and not appropriate for 99% of consumers.
